THE WORKING FARM

The main objective, pursued strongly by the farm, is maximum respect for the land. Cultivations follow the principle of integrated agriculture which has a very low environmental impact. The rooves of the farm are covered with a 50 kw photovoltaic system, that reduces the carbon dioxide emissions and make it electrically autonomous.

The main varieties of olives, Correggiolo, Frantoio, Moraiolo and Leccino, are grown at Podere Cisternella. Olive picking is strictly done by hand and the crates are stored for a maximum of 48 hours. Within these 48 hours, the pressing is done in one of the nearby mills, using the controlled temperature, continuous cycle pressing system.

The farm's vineyards extend to 5.000 square metres. Sangiovese and Merlot are the vine types that are grown here. The winemaking is done in the farm's cellar where the wine is kept, partly in barriques and partly in steel barrels.

Livestock Farming

Animals, such as rabbits, chickens, ducks, guinea fowl, doves, turkeys and donkeys are raised on the farm with care and respect. They are fed fresh produce cultivated on the farm.

Crops

The main crops cultivated on the farm are mainly wheat, sunflowers and corn. The holiday farm's guests are welcome to participate in the care of the vegetable garden and pick all types of vegetables, tubers and seasonal fruits.

Tradition

The flour used on the farm is obtained exclusively from antique grains, ground in stone thus leaving integral the properties of the grain. For generations the culture of bread-making by hand, using grains grown from ancient, seeds has been handed down.
